Matt deemed my last batch of veggie burgers, um... very good! So I thought I should share the recipe.
Cook 1/2 cup lentils and 1/2 cup brown rice together for about 40 minutes in 3 cups of water.
Use most of it, I left our about 1/2 cup after it was cooked because it expands and makes much more than 1 cup of rice & lentils.
So throw the following into a food processor and blend well:
previously cooked lentils and rice
1 can red kidney beans (drained well)
1 small carrot cut into small pieces
1/4 teaspoon cumin
1/4 teaspoon Mrs. Dash or other season all spice
Now add to food processor:
1 small green bell pepper finely diced
1/4 - 1/2 cup finely diced onion
1 egg
2 pieces of whole wheat bread or white bread crumpled
For spicey burgers add some jalepenos - yum!
Blend again at medium speed until well mixed.
Mixture will be thick, but won't form burgers very well in your hand.
I use a 1/2 cup measuring cup and scoop the mixture out and into the frying pan forming a blob which I mold into a patty using my spatula. As they cook they start to hold their form a little better - you can add more bread crumbs if you want - that'll do the trick. Anyway, put some oil in the fry pan and cook those patties about 3-5 minutes on each side. Be careful when you turn them, but if they fall apart just reform them into patties using the spatula. I put a piece of cheese on top just before taking them out. Serve on a bun with all the fixins you care to have! Mustard, ketchup, and cheese was awesome and enough for us!

This recipe will make 6 good size patties or 8 medium ones.
You have to try these - they are scrum-didly-rumtious.
